Today I am passing on some healthy options for fall. These warm meals are tasty and warm on a cold day.
Fluffy Apple Omelette (serves 4)
4tsp margarine (light)
2 small apples, cored, peeled and sliced
1tsp brown sugar substitute
1tsp orange peel, grated
dash cinnamon
4 large eggs, separated
1tbsp sugar substitute
1/4 tsp vanilla extract
1/4 cup water
Heat 2tsp of margarine in a skillet. Add apples slices, brown sugar substitute, orange peel and cinnamon. Sauté over medium heat until apples are glazed and tender. Beat egg yokes, sugar substitute and vanilla together in a bowl until thick. In another bowl, beat egg whites with water until stiff. Fold beaten whites into yolk mixture. Melt 2tsp margarine in a skillet. Pour egg mixture, spreading lightly to smooth top. Cook until light and fluffy and lightly browned underneath. Spoon apples onto omelette and fold over.
Healthy Lasagna(serves 4)
1cup lean ground beef
2 cups tomatoes, diced
1 cup celery, chopped
1/2 green onion, chopped
1 cup green pepper, chopped
2 cloves garlic, minced
black pepper to taste
cayenne pepper to taste
3 cups spinach leaves
1 cup cottage cheese (1% or non fat)
8oz firm tofu
1/2 cup mozzarella cheese, shredded
Preheat oven to 400F. In a skillet, brown beef. Add tomato, celery, onion, green pepper and garlic. Season to taste with black pepper and cayenne paper. Let simmer. In a baking dish, layer sauce, spinach. cottage cheese, and tofu. Top wit cheese and bake for 1 hour.
Apple Crisp(serves 4)
4 small apples, peeled and cubed
12 slices melba toast, crushed
4pkgs sugar substitute
1/2tsp cinnamon
3cups yogurt (fat free, plain, or stirred)
Combine apples and crushed melba toast in a bowl. Toss with sugar substitute and cinnamon. Serve with plain yogurt.
