Since Thanksgiving is this weekend I though I would give you a few recipes that are healthy and delicious.
Cauliflower Mash (serves 8 - 1/2 cup each)
6 cups cauliflower florets
1/3 cup low fat milk or almond milk
2 garlic cloves
2tbsp butter
1tsp fresh thyme
1tsp salt
1/2tsp black pepper
steam or microwave cauliflower until very tender. Using a food processor or potato masher, mash the cauliflower with milk and garlic until smooth. Mix in butter, thyme and salt and pepper.
Savory stuffing with Cranberries (serves 6 - 1/2cup each)
1 cup low sodium chicken broth
1 cup chopped celery
1/2 cup chopped onion
10 slices whole grain bread, toasted and cut into cubes
1/4 cup chopped parsley
1tsp dried tarragon
1/2tsp paprika
1/8tsp ground nutmeg
1/2cup chopped fresh cranberries
1cup whole water chestnuts
1cup chopped apple
preheat oven to 350F. Lightly coat a 2 quart baking dish with cooking spray. In a large skillet, heat chicken broth over medium heat. add celery and onion and sauté until vegetables are tender, about 5 min. remove from heat. in a large bowl , combine the bread cubes, parsley, tarragon, paprika, nutmeg, cranberries, water chestnuts and chopped apples. add the onion and celery mixture. stir to mix evenly. spoon stuffing into the prepared baking dish, cover with aluminum foil and bake for 20 min. uncover and bake 10 more min. serve immediately
Hearty Garlic Green (serves 8)
1 1/2lbs autumn hearty greens, well washed, stems removed and sliced into 3in strips
2tbsp extra virgin olive oil
8 cloves garlic, sliced paper thin
1lb spinach
1/2tsp red pepper flakes
Bring a large pot of salted water to boil. Drop hearty greens into water and blanch for 4 min. immediately plunge blanched greens into a bowl of ice-cold water to stop the cooking. Drain, squeeze dry and set aside. Heat oil and garlic in a large skillet over medium-low heat. Cook until the garlic is golden around the edges, 8-10min. With a slotted spoon, remove garlic from skillet, set aside. add hearty greens and cook for an additional 4-5min. add spinach and season with salt and red pepper flakes to taste. Cook until spinach wilts, stirring frequently. Return garlic to pan and stir. can be served immediately or at room temperature.
