Today I'm going to give you my favorite breakfast which is a spinach frittata and a simple light lunch that is fantastic and deliciously healthy.

First up is the Spinach Frittata (Serves 1)  The thing I love about frittatas is that you can put anything in them and they are so good.

Preheat oven to 500 degrees F on Broil
In an oven friendly frying pan (usually cast iron) sauté 1/4 cup onions until transparent approx. 3min in 1 tsp. of coconut oil.
add 1/2 to one cup tomatoes and 1-2 cups spinach.  Cook until spinach wilted.

then place pan into oven for approx. 7-10 min. or until top is slightly golden brown and enjoy.

This equals 2 proteins, 2 vegetables and 1 fat.



Crab stuffed Tomatoes (Serves 2)

4oz canned crab meat, drained
2tbsp. minced green onion
1tsp. finely chopped dill

1tsp. finely grated lemon rind
2tbsp. fat free mayonnaise
dash of black pepper
2 firm ripe small tomatoes
1tsp. finely chopped parsley

Mix crab meat, green onion, dill, lemon juice and rind, mayonnaise, and black pepper.

Place tomatoes stem-side down.  Make three vertical cuts in each tomato nearly through to the bottom.  Spread wedges to form a tomato cup.  Stuff the tomatoes with crab mixture.  Garnish with fresh parsley.

This equals 1/2 protein, 1/2 vegetable, 1 fat.

Cooking healthy meals does not have to be hard.  Go online and google some of your favorite foods and look for health alternatives that are similar.  You would be surprised to see all the great ideas to make good food healthy.
